Vegetarian Quinoa
- 1 cup quinoa
- 2 cup organic vegetable broth
- 1 cup kale
- 1/2 cup cilantro with stems removed
- 1/2 cup zucchini
- 1/2 cup broccoli
Directions
Rinse 1 cup of quinoaCook quinoa with 2 cups of vegetable broth and garlic for approximately 8 minutes.
Add zucchini, kale, broccoli, and cilantro for remaining two minutes.
Tip: add vegetables before broth is fully evaporated and don't oversteam vegetables. Zucchini may require more cooking time depending how firm you want it so add it before adding the other vegetables.
Add your favorite protein. Salmon is highly recommended.
